BBQ Bacon & Chicken Pizza

Hi All,

Just looking at this gluten/dairy free BBQ bacon & chicken pizza makes my mouth water! I overloaded this one, but it was sooooo good!!! This is a vegan tortilla crust that allows your creativity to flow!

I started using this as a pizza crust in 2007 when I tried this tortilla as a wrap and found it to be a little tough.

This crust is an easy way for me to hide good protein in a pizza for my son. He likes it with pizza sauce, diced/cooked chicken breast, and cheese.

Disclaimer: These portions are all just a guess. I don’t like to measure when it comes to creating in the kitchen. Please just let this be a guide for your own creation…

BBQ Bacon & Chicken Pizza

  • SPRINKLE some sea salt on a cookie sheet and pre-heat your oven to 400 degrees.
  • PLACE 1 Food for Life brown rice tortilla onto salted cookie sheet.
  • SPREAD your favorite BBQ sauce onto the tortilla. I use Bone Suckin’ Sauce.
  • SPRINKLE with chopped red onion, cooked/chopped chicken, and cooked/chopped bacon.
  • BAKE on the bottom oven rack of the oven for about 15-20 minutes until crisp.
  • SLIDE it onto a plate and cut into squares.

PESTO PIZZA

  • SPRINKLE some sea salt on a cookie sheet and pre-heat your oven to 400 degrees.
  • PLACE 1 Food for Life brown rice tortilla onto salted cookie sheet.
  • SPREAD your favorite pesto onto tortilla. I like using a dairy free packaged one called Amore.
  • SPRINKLE with chopped roasted red bell peppers, chopped/cooked chicken, chopped artichoke hearts, chopped fresh spinach, and dried oregano.
  • BAKE on the bottom oven rack for about 15-20 minutes until crisp.
  • SLIDE it onto a plate and cut into squares.

Yet, another way I enjoy it…

This one has refried beans, cooked chicken, sprinkled with some chili powder, and yellow tomatoes. When I pulled it out of the oven I added the fresh chopped cilantro and green onions.

I did refried black beans, diced red onions, mild green chilies, cooked chicken, diced tomatoes and sprinkled it with some chili powder. I added the avocado when I pulled it out of the oven.

I’ve also done it with pizza sauce, green bell pepper, onion, Daiya mozzarella shreds, pepperoni, and dried oregano.
