This was an easy gluten/dairy free pulled BBQ Chicken from our pantry/fridge. I made some pulled chicken over the weekend for meals during the week. I also cut some bell peppers, carrots, red, and white onions.
I would love to make all of my own homemade BBQ sauce! I just do not make the time to do so. Maybe someday I will get to that. Along with my someday dream garden;)
Disclaimer: These portions are all just a guess. I don’t like to measure when it comes to creating in the kitchen. Please just let this be a guide for your own creation…
Pulled BBQ Chicken
- SAUTE 1/2 red onion with 1 tbsp. coconut oil and some sea salt until just about tender.
- ADD a jar of Bone Suckin’ sauce or your favorite BBQ sauce.
- STIR in enough pulled chicken to create your perfect portion.
- BOIL some boneless (or bone in) chicken breast until no longer pink.
- LET cool.
- PULL the chicken with a fork in each hand.
I used boneless chicken breast on this one. Sometimes I just boil a whole chicken with some aromatics to make a broth. That way I have the pulled chicken and broth for the week. You can freeze the broth as well.
There are so many things you can make during the week if you already have your chicken pulled. Our family loves this pulled BBQ chicken!
You could serve it on a a gluten free bun with some mustard and pickles with a side of fries. Serve it in a baked sweet potato, or just a bowl with a side of cole slaw. We had ours in a bowl with a side of cucumber salad.
