Easy gluten/dairy free bison salsa made 3 ways. I should have doubled this recipe because it went fast! Leftovers would have been lovely.
Another stocked pantry/fridge meal idea. Sometimes I am at a loss as to what to make for dinner. When I’m at the grocery store I head to the pre packaged frozen meals to help inspire me. When I see a meal that looks good, I go get the ingredients and then switch it up a little for our needs.
This is how my toddler enjoyed his dish…
I spread the guacamole on each side of the taco shell with a knife so the meat sticks to it and then a ton of shredded cheese.
- BROWN 1.25 pounds of ground bison until no longer pink.
- DRAIN and return bison back to skillet.
- ADD 1-16 oz. jar of your favorite salsa and 1 can of pinto beans.
- LET simmer for 15 minutes or so.
I say 1.25 pounds of ground bison only because I get the 2 pack of it at Costco and that’s how many pounds it is. You could totally do this with the 1 pound that it usually comes in.

I bought a head of iceberg lettuce for the first time in a long time and loved it! I added some slices of avocado and green onion to mine.
I usually make my own taco seasoning after browning and draining the ground bison. I stir the following taco seasoning to it, add a little water, cover, and turn it to low for 15-30 minutes.
- 2 tbsp. chili powder, 1 tbsp. cumin, 1 tbsp. smoked paprika, 1 tbsp. coriander, 1 tbsp. garlic powder, 1 tbsp. dried oregano, and S/P.

My toddler had a few bites and loved it this way, too. My husband added a layer of cheese, sour cream, green onion, and pepperoncini peppers.
This dish would be great in a gf tortilla, as a lettuce wrap, or over spaghetti.
