This gluten and dairy free chicken & broccoli salad is a home run in my book! Another super quick go-to with a little help from prepping ahead, pantry, and freezer items. This would be great to throw on bib lettuce as a boat to eat it.
Prepping ahead of time some of your favorite staples that go with almost anything is key to quick go to meals! I feel like chicken is the best versatile protein. I’ve also made some ground bison with Mexican spices to add to salads with a little salsa during the week. It’s also good mixed with some rice or rice noodles.
Disclaimer: These portions are all just a guess. I don’t like to measure when it comes to creating in the kitchen. Please just let this be a guide for your own creation…
Chicken & Broccoli Salad…
- STIR together in a bowl: 1 tsp. dried thyme, 1 tsp. garlic, 3-4 tbsp. mayonnaise (I use soy free veganise), 1-2 tbsp. apple cider vinegar, and S/P.
- INCORPORATE to that mixture: about a cup of already cooked/diced chicken, handful of green onion, 1/2 cup thawed/chopped broccoli, 1 tbsp. sunflower seeds, and 1 tbsp. chia seeds.
Chia seeds are known to be helpful in boosting your omega-3’s, protein, fiber, antioxidants, and calcium. I like to add them to all my salads especially in this chicken & broccoli salad. You could also add them to yogurt, oatmeal, soup, and smoothies.
I really like the follow your heart soy free veganise mayonnaise! They have the best ingredients that I’ve found in a mayonnaise for our family so far.
