Gluten free and vegan chocolate doo-dads are about the only dessert I can handle;) This used to be my all time favorite 3 ingredient cookie! The easiest no bake recipe EVER! I’m not sure where the name originated, however I did get this recipe from my sister. Thank you, Tammy!
You know I’m not a baker AT ALL, so this is right up my alley. It also has less sugar than a lot of cookies!
- MELT 1/2 cup nut butter in skillet on medium high heat.
- STIR in 3/4 cup enjoy life semi sweet chocolate chips, and melt.
- ADD 1 cup crispy brown rice cereal.
- COAT cereal with mixture.
- SPOON onto wax lined cookie sheet with a tablespoon and refrigerate for an hour.
Chocolate is so good and I’ve stopped making these because I switched over to a square of the dark chocolate enjoy life bar a day. They say dark chocolate is good for you!
Speaking of sugar, I’ve tried to cut back on the little bit of it that I use. Coffee is the only thing I actually add coconut sugar to. Although, I do add a little honey to sauces and salad dressing sometimes.
So, I’ve been trying to stay off coffee this year. It’s gone alright only because I’ve had bronchitis for the last 12 days. I switched to caffinated green tea in the morning with lemon and hope to eventually get off the caffeine too. I’ve read that coffee can be troublesome for thyroid disease and I’m not sure if it’s the caffeine or the coffee.
We are all taking baby steps to create better health for ourselves and our families. I have found that my baby steps have added up over the years and eventually – maybe one day – I will be at my optimum health if I stay on track.
